If you haven’t heard yet, avocados are the Oprah of Instagram. They’re the most photogenic produce. They’re simple and wholesome. They’re creamy and nutritious.

Avocados have no equivalent. Except Oprah, as has been already established.

Avocados are also way overdone. And I can’t be the only one who thinks they’re an acquired taste.

Yet, here I am, pitching you another avocado toast. I’m sorry… Except that I’m not, because I’m pretty convinced that this avocado toast is the bee’s knees.

This recipe is a few days overdue, but it’s the third edition of this month’s breakfast picks. Mushrooms are one of my favorite additions to food, but they can be so bland unless you do something to them. That’s where this fabulous herb mix comes in. It takes plain old avocado toast to a whole new level.

Avocado Mushroom Toast

serves 1

  • 1 slice toast
  • 1/3 cup mushrooms
  • 1/2 avocado, sliced
  • 1 teaspoon olive oil
  • 1/4 teaspoon oregano
  • 1/8 teaspoon caraway seeds
  • 1/8 teaspoon coriander
  • 1/8 teaspoon cumin

Heat the olive oil in a skillet. Add the herbs, and then sauté the mushrooms for 5-10 minutes, or until browned. Meanwhile, use a toast the toast. Assemble by placing the avocado slices on the toast. Place the mushrooms on top. Eat immediately.
