Thank you, you lovely readers! The blog has been a bit sparse lately, what with prepping and packing for Egypt and all. I have, however, been working on fun new recipes for the month of July. Can you guess the theme?!
I REPEAT: GRILLED CHEESE.
This is not a drill people! This is me on a journey of self discovery. The goal? What won’t I put between two pieces of bread and fry. So far, the answer is almost anything. Seriously, guys… almost anything. If you suggest a few ingredients to me, I will probably try it. Such is my adventurous spirit.
But! For all you magnificent little flower faces, I’m starting off nice and easy with this avocado & feta combination. Try it out and tune in next week for another grilled cheese experiment!
p.s. For the month of July, I’d highly suggest tossing your scale off the roof. Nobody needs that negativity in his/her life. #laterhaters
Avocado & Feta Grilled Cheese
- 2 slices toast or other bread
- 1/2 avocado, sliced
- 1/3 cup shredded cheddar cheese
- 1/4 cup crumbled feta
- 1 roma tomato, sliced
- 3 tablespoons butter, divided
Heat a skillet on medium heat. Use 1 tablespoon to butter each slice of bread. Place a slice of bread on a plate with the buttered side facing the plate. Assemble your sandwich by layering slices of avocado, cheddar cheese, feta, and tomato slices. Top with the other slice of bread, buttered side facing you. It’s alright if all the ingredients don’t fit in the sandwich! Melt the remaining tablespoon of butter in the skillet. Cook the sandwich for about 2-4 minutes on each side, or until the outside turns a golden brown and cheddar cheese is melted. Enjoy while hot!
